Chicken Cordon Bleu

8 chicken breast
8 thin slices of swiss cheese
8 thin slices of ham (deli style); cut into chunks
2 cans of cream of chicken soup
1/2 c. water
1/2 c. sour cream
2 c. crushed ritz crackers
1/2 c. melted butter


  1. Preheat oven to 375 degrees
  2. Place chicken in a baking dish and top with cheese and ham.
  3. Mix soup, water, and sour cream together; pour over top
  4. Mix crushed crackers and butter together; sprinkle on top
  5. Bake for 30-45 minutes or until chicken is done.
Note:  Cut chicken into large chunks for quicker cooking.

Rice Pilaf

2 T. butter
1 cup uncooked rice (not minute rice)
1/4 c. diced onion
1/3 c. diced celery

  1. In a frying pan, stir all together until rice is brown
  2. Then add:
3 cups hot chicken broth

  1. Cover and cook until done or all the broth is absorbed (might need to add a little extra broth)
  2. Then add:
2 T. chopped parsley
1/4 cup slivered almonds

Toss lightly and serve
