4 large un-peeled potatoes
1/4 c. butter
1 T. minced onion (can use dehydrated)
1 tsp. salt
1/8 tsp. pepper
1 c. shredded cheddar
- Thinly slice the potatoes and place in a greased casserole dish.
- In a small saucepan, melt butter and add onion, salt, pepper.
- Cover and bake at 425 degrees for 30-45 minutes until tender.
- Sprinkle with shredded cheese and cover just to let cheese melt.
