Italian Meatball Sliders

24 frozen meatballs, thawed
2 cups marinara sauce
8 ounces sliced provolone or mozzarella
2 Tablespoons butter
1/2 teaspoon garlic powder
1/2 teaspoon Italian seasonings
24 dinner rolls or 8 hot dog buns cut in thirds

Preheat oven to 400 degrees. Line a 9X13 pan with foil and spray with cooking spray.

Warm the meatballs in the marinara sauce in a saucepan over medium heat. Separate the dinner rolls or hot dog buns and place one saucy meatball on the bottom roll. Top with mozzarella or provolone. Place the top roll on and push down slightly. Place meatball slider in the pan and continue to assemble the rest of the sliders. 

Microwave butter in a bowl in the microwave until melted. Add garlic powder and Italian seasonings and mix well. Brush tops of buns with melted butter mixture. 

Toast in oven for 8-10 minutes or until toasted. I like mine a little more on the soft side...not so toasty.

BBQ Bacon Meatball Sliders

24 frozen meatballs
Favorite BBQ sauce
24 small slices of cheddar cheese
Bacon; cooked and cut in thirds
8 gourmet hot dog buns; cut into thirds
2 T. butter


  1. Preheat oven to 375 degrees
  2. Cook meatballs according to directions; place in heated bbq sauce
  3. Place one meatball, a slice a cheese, and piece of bacon on each 1/3 of hot dog bun
  4. Line a 9x13 pan with foil and brush tops with melted butter.
  5. Toast sliders for 8-10 minutes; watch closely!!

Bacon-Wrapped Cocktail Sausages

1 14-oz. package Lit’l Smokies
1 12-oz. package lean bacon
3/4 c. brown sugar

  1. Preheat your oven to 325 and line a baking sheet with aluminum foil. Using a pair of kitchen shears, cut the slab of bacon into thirds.
  2. Wrap 1/3 of each slice of bacon around each sausage and secure with a toothpick and place on the baking sheet.
  3. Repeat with remaining sausages and bacon. When I was making these, the stars somehow aligned and this package of Lit’l Smokies and Hormel Black Label bacon matched up completely–no leftover bacon, no leftover sausage. Sprinkle brown sugar over sausages
  4. Bake at 325 for 40-45 minutes or until bacon has cooked and is starting to brown.
Note: If you’re serving these at a party, they taste even better after a little time in the slow cooker on low heat.

Easy Pretzel Turtles

small pretzels
Rolo candies – one bag has about 55 candies
Pecan halves – or optionally peanuts, cashews, and m&m’s
Optional: almond bark or white chocolate for drizzling

Preheat your oven to 350 degrees. Place pretzels on a parchment lined baking sheet. You can also put them on foil, a silpat, or directly onto the cookie sheet.

Place pan in the oven for 3-4 minutes. Any longer is probably too long. You just want the chocolate on the outside to look glossy and melty, but they should still hold their shape.

Press nuts into soft rolo and drizzle with white chocolate

Chocolate Dipped Peanut Butter Stuffed Ritz Sandwiches

1 sleeve Ritz Crackers
1/2 cup peanut butter
4 squares (8 oz) white almond bark

Spread a bit of peanut butter on as many crackers as you want, and top with another cracker to make a sandwich.
Melt the almond bark in the microwave on low to medium heat, stirring every 30 seconds until it’s melted and smooth.
Grab a sandwich with tongs and drop it in the melted almond bark, turning over a few times to coat.
Place on wax paper to cool for about 20-30 mins before serving.

Nasty Crab Dip

Don't let the title fool you!!  It's good, and I don't like seafood/fish!!

2 green onions thinly sliced
8 oz. cream cheese
6 oz. Lump crab meat (canned works great)
1/2 c. shredded cheddar cheese
1/2 c. finely chopped red peppers
1 T. dijon mustard
Optional:  a little milk to thin out to desired consistency
  1. Mix all ingredients together and chill at least 1 hour.  Serve with crackers.

Caramel Toffee Fruit Dip

1 8-oz. package cream cheese (you can use light cream cheese)
3/4 c. brown sugar
1 1/2 tsp vanilla (you can add more to taste)
Toffee bits (look by the chocolate chips and try and find the chocolate covered ones if you can! Your dip won’t be pretty, but it will sure taste good!)

Allow cream cheese to reach room temperature.
With an electric mixer, combine cream cheese, brown sugar, and vanilla.
When ready to serve, stir in about 1/2 a bag of toffee bits.
Serve with fruit

Orange Frosted Cranberry Cookies

Cookie:
1 c. white sugar
1/2 c. brown sugar
1 c. softened butter
1 tsp. grated orange peel
2 T. orange juice
1 egg
2 1/2 c. flour
1/2 tsp. baking soda
1/2 tsp. salt
2 c. dried cranberries
1 c. chopped macadamia nuts

  1. Heat oven to 375 degrees
  2. In large bowl, beat sugars, butter, orange peel, juice and egg
  3. Mix remaining ingredients together and add to butter mixture.
  4. Drop by tablespoonfuls onto lightly greased cookie sheet.
  5. Bake 12-14 minutes.  Cool completely
  6. Frost a thin layer onto each cookie.
Frosting:
1 1/2 c. powdered sugar
1/2 tsp. orange peel
2-3 T. orange juice 
  • Whisk until smooth
These are insanely good the next day!!!

Dinner In a Pumpkin

Perfect meal to warm everyone up before heading out on Halloween night!!

1 hour prep time
1 1/2 to 2 hours cook time

1 medium pumpkin (or squash)
1 onion; chopped
1 garlic clove; minced
2 T. vegetable oil
1 lb. ground beef
2 T. soy sauce
2 T. brown sugar
1 (4 oz) can sliced mushrooms; finely chopped
1 can cream of chicken soup (10 3/4 oz)
3 cups cooked rice

**Optional:  2 T. brown sugar and 1 tsp. pumpkin pie spice mixed together**

  1. Before starting the recipe, cut off the top of the pumpkin and thoroughly clean out the pulp and seeds.
  2. Optional, but highly recommended....rub the inside of the pumpkin really well  with the brown sugar-spice mix
  3. Preheat oven to 350 degrees
  4. In large skillet, saute onions in vegetable oil until tender.
  5. Add and brown ground beef
  6. Add soy sauce, mushrooms, brown sugar and soup
  7. Simmer for 10 minutes; stirring occasionally
  8. Add cooked rice
  9. Spoon mixture into cleaned out pumpkin shell
  10. Replace pumpkin top and place entire pumpkin, with filling, on a baking sheet into the oven.
  11. Bake for 1 1/2-2 hours or until the inside of pumpkin is tender enough to eat.
  12. Put entire pumpkin on table, remove lid and serve!!!
Make sure you scoop out some of the pumpkin while you are serving too!!  Great and fun way to get a serving of vegetables!!

Thanksgiving Yams

I know it says side dish, but this is basically a dessert. This is my home ward Relief Society president's famous recipes.

6 c. canned yams
2/3 c. melted butter
4 eggs
1/2 c. sugar
1 1/2 c. milk
2 tsp. vanilla
1 tsp. salt

Mix all ingredients and put into a greased 9x13 pan.

Topping:
1 c. pecans
3 TB. flour
1 c. brown sugar
1/3 c. melted butter

Combine and sprinkle on top of yams. Bake at 350 degrees for 30-35 minutes.
